Tequila: production methods and raw materials

Many people mistakenly believe that tequila is a type of cactus vodka, but this is a myth. Genuine tequila is made exclusively from blue agave (Agave tequilana). The production process is an art that requires patience: the agave takes between 7 and 10 years to mature before its core (the ‘piña’) can be used.

The jimadores cut off the leaves, and the hearts are baked in special ovens to convert the starch into sugar. The juice is extracted from the piña. The juice ferments, after which it undergoes double (or, less commonly, triple) distillation. Depending on the type, the spirit is transferred to oak barrels or bottled straight away.

High-quality tequila has an alcohol content of around 38–40% and is labelled ‘100% de Agave’. This guarantees that it contains no added spirits or sugars. 

Types of tequila: Blanco, Reposado, Añejo

Tequila is classified based on the length of time it spends in the barrel. Each type has its own unique taste and aroma:

  • Blanco (Silver). A clear, unaged tequila. It offers a clean, intense aroma of fresh agave with hints of citrus and pepper. An excellent choice for making popular cocktails such as the ‘Margarita’.
  • Reposado. This translates as ‘rested’. It is aged in oak for between 2 and 11 months. The drink takes on a golden hue and a smooth flavour with hints of vanilla, caramel and wood.
  • Añejo. Aged tequila (1 to 3 years). It has a rich amber colour and a complex bouquet reminiscent of premium brandy or cognac, and comes with a price tag to match. The flavour is dominated by notes of chocolate, dried fruit and smoke. 

There is also a separate category known as Extra Añejo — a premium category of tequila aged for over 3 years. This is a collector’s item, typically enjoyed neat.

The choice depends on your intentions. If you’re looking for a drink for a party where cocktails will take centre stage, it’s best to go for Blanco. Its vibrant character won’t get lost among the other ingredients . For a leisurely tasting, opt for Reposado or Añejo.

Pay attention to the producer. A well-known brand values its reputation, so it uses only the finest ingredients. Price is also an important indicator: genuine 100% agave tequila cannot be too cheap due to the plant’s long growth cycle.
